| Career History: | Catering Manager June 2001 – Present Responsible for the training of health and safety within the catering department taking into account both staff and costumers to include electrical & risk assessments, HACCP, COSHH, RIDDOR and First Aid at Work. Administered and managed a staff of 28 in 5 locations to include welfare, training with a varied customer base and menu cycle. Produced mid-year and yearly appraisals for junior members of staff for senior management. Supervised the daily programme for a multi talented workforce. Kitchen Manager / Master Chef September 1998 – June 2001 Responsible for an independent location with a medium size team for 3 years feeding 200 customers daily. This included the personal admin for all staff, accounting, stock control and ordering, health and safety, risk assessment and discipline. Supervised the daily programme for a multi talented workforce. Introduced and maintained a comprehensive fault reporting system for equipment. Planned and executed training days for all members of staff to increase productivity and employee confidence. Ensured the correct legislative documents were maintained and stored correctly for a large food outlet. Introduced measures for the continuation of staff training. Responsible for all stores and equipment, with accountable checks on a weekly basis. Monitored all legislation was complied with; this included the COSHH, RIDDOR, Health and Safety, Food Hygiene and Fire Safety Production Supervisor July 1992 – September 1998 Managed and administered a small group of chefs within two locations producing high quality food for senior staff. Organised and controlled numerous functions for senior staff including fine dining and outside catering events to a tight budget. Supervised shifts in a location feeding 400-600 numbers, ensured that all daily goals were met, continuation training of junior personnel, maintained the legislative records, menu planning and the general supervision of all staff within the team. Established and maintained an outside catering location for a period of 6 months feeding up-to100 people in adverse conditions with a team of 4 chefs. |
